Mostly an effort to try to get ahead of the Christmas baking while juggling a few other things… Christmas shopping, Christmas decorating, baking, wrapping, cleaning, organizing… not sure how I managed get myself into this mess, but there I was. Yup, another pumpkin recipe. I know, I really should be concentrating on holiday cookies now, but as I woke the other morning to a blanket of white snow covering the yard and roof tops, i decided I just wasn’t ready. Determined to cheer up that gray gloomy day, I spotted the silicone muffin tray in the sink. I used it a couple of days earlier to make individual blondies, and I have a habit of not putting things away. Or as my husband calls it, a talent for covering every single surface/table in the house.

It’s hard to resist pumpkin desserts this time of year. Starting off with Canadian Thanksgiving, followed by Halloween, and American Thanksgiving pumpkin and pumpkin spice goods are everywhere. Easy Peasy Carrot Cake

Although a cake with cream cheese frosting seems appropriate all year round, carrot cake, with its warm spices seems all the more appropriate as the cooler weather arrives. Most carrot cakes I’ve come across have thick layers of dense, and sometimes dry cake, with a thin almost nonexistent layer of frosting in between them. Not this cake.

A couple weeks back I was looking for birthday cake ideas for the hubby’s B-Day. Every year I have uncontrollable urge to surpass the previous year’s cake. Last Year I whipped up a an easy, but delicious chocolate cake, with peanut butter frosting and a layer of peanut butter caramel in the center. A recipe I’ll have to repeat again one of these days as my note taking was horrible and I know need to revalidate the whole recipe. I hate when that happens. I rush to bake the cake and think; I remember what I put in, I’ll write it down tomorrow. Suddenly, tomorrow turns to next month, leaving me plagued with doubt as I scribble down what little notes I can remember.

Going through the fridge over the past few weekends I noticed quite a few bottles of open red wine. I know leftover wine might be a foreign concept to some people I know (I won’t name names). Not being a big drinker myself, it’s not uncommon to have leftover wine in the fridge after dinner parties or get togethers. Usually the contents will make their way into sauces or stews, or on a few occasions, forgotten about for months and eventually poured down the drain (gasp! I bet that just cost me a few followers). If there is one thing that has been extremely abundant this summer; it’s the garden’s raspberry production. They just keep coming. I’ve been throwing them into just about everything over the past month, and the freezer is completely stocked with bag upon bag. Blueberry-Lemon Pancakes

As the blueberry bushes in the garden start to fill with ripening fruit I find myself digging through the freezer to make sure I’ve used up last year’s produce. The berry bushes tend to produce more then I can use prior to them spoiling, however freezing these sun ripened gems makes them easy to add into smoothies and baked goods year round. To freeze berries, line a baking sheet with parchment paper and scatter the berries in a single layer. Freeze for 3-4 hours prior to transferring to a freezer container or zip top freezer bag.
